I'd much rather see Apple come out with a headless Gaming mid-tower with a Core 2 Duo Extreme and X1600 card. Dual HD bays and one optical bay. AP/BT built in. 3 PCIe slots (one used by X1600). I think that would would fill a gap Apple has in their consumer line-up right now.
